Take Back the Tray is a movement to reconnect food with health, wellness, education, and rehabilitation in public institutions around the globe. And it's a story about a chef who took on the institution and tried to make change.

Take Back the Tray is also a book I've written about my experience trying to change the way we eat in public institutions. It's my story about trying to make it work, and a blueprint for change.

Take Back the Tray is a campaign for change.

Institutions are places where we learn, heal, and grow. And for such important work, we need proper fuel.

 

It's time to take back the tray! Institutional food has got to change! We cannot keep serving budgets instead of serving patients, students, prisoners, and community members real, wholesome food.

I'm a chef on a mission to rethink institutional food, and I want to change the way schools, hospitals, and other public institutions procure, cook, and serve food. It could be so much better than it is now, with outcomes that benefit everyone, beyond the walls of the institution! I've managed four big changemaking projects over the past 13 years, and I've written a book about what I've learned and how to make it work.
